Here is how you make Summer Spring Rolls with Peanut Sauce:

1. Wash and dry the fresh produce. Heat a small pot of salted water to boiling on high. Pick the basil leaves off their stems. Peel and cut the carrot into thin matchsticks. Separate the lettuce leaves. Cut the cucumber into thin matchsticks.2. In a large pan, heat some oil on medium until hot. Add the shrimp and season with salt and pepper. Cook 1 to 3 minutes, or just until the shrimp are pink throughout and cooked through. Transfer the cooked shrimp to a bowl and place the bowl in the refrigerator to cool.3.
