6 Medium sweet red peppers, roasted and peeled, seeded
2 c. half and half
1 tbsp. fresh chopped italian flatleaf parsley
1 tsp. paprika
1 tsp. fresh lemon juice (or juice from 1/2 lemon will do)
3/4 tsp. salt
1/8 tsp. white pepper
pinch of cayenne pepper
1/2 c. plain nonfat yogurt

1/2 c. chopped onion
2 Tbsp. butter
1 tsp. olive oil
1 1/2 - 2 lb. scallops (small are better)

Place peeled and seeded roasted red peppers in food processor and pulse until fairly smooth. Add parsley and pulse again, 2-3 times (10 sec. each time). Place pureed peppers and half and half in pan and simmer until reduced in half, about 35 minutes, stirring occasionally. Add the rest of the ingredients and simmer a few minutes until hot. Remove from heat. Chop 1/2 c. onion and saute with scallops in 2 Tbsp. butter and 1 tsp. olive oil for 4-5 minutes. Add sauce and bring to a slow simmer for just a few minutes. Serve over rice.
