Cook the rice ahead of time, separately.Put the oil in a fry pan over medium heat and add the garlic. When it starts to sizzle, add the salmon fillet and brown it, then sprinkle the tarragon over the fillet. After a minute or two, when the salmon is mostly cooked, add the sherry and simmer until it is reduced by about half.Take the fillet out and put it to one side. Put the spinach in the pan, add a little water if necessary, and cover the pan, letting the leaves steam.Put the leaves on two plates, put 3/4 cup of cooked rice on the bed of leaves, and then salmon on top of that.
