1 8 oz package fresh mushrooms, cleaned and quartered
1 can (7.75 oz) spinach, drained
1/4 c. fat free half and half
1/4 c. light sour cream
1/4 c. parmesan cheese
4 oz. light cream cheese (neufchatel)
8 oz shrimp
8 oz scallops

Here is how you make Creamy Spinach and Mushroom Sauce with Seafood:

Heat oil in medium size skillet and saute mushrooms. When mushrooms are browned and cooked through, transfer them to a medium sauce pan. Add spinach, half and half, sour cream, parmesan, and cream cheese and heat to slow simmer. Meanwhile, saute shrimp and scallops in skillet used for mushrooms until cooked through. The shrimp should be pink, and the scallops no longer transparant. Do not overcook as the seafood will get tough and chewy.
