Here is how you make Cajun Shrimp with Tomato Alfredo Sauce:

1. Season shrimp with cajun seasoning (or any other seasoning you prefer)2. In a large skillet, heat 1 tbsp of the olive oil over medium high heat. Add the shrimp and cook on both sides until pink, shouldn't take more than a couple of min.3. Remove shrimp from the skillet and set aside.4. Add the remaining olive oil and butter to the skillet. Add the chopped onion and garlic and cook until onion becomes translucent (about 3 min).5. Add the tomatoes (puree them in the blender first) to the skillet and boil, then turn down the heat and simmer for about 15 min. 6. Add spinach and cook until it wilts.7.
