2 Tbsp hoisin sauce
2 Tsp minced fresh ginger
1.5 lbs shrimp OR 4 fish filet - cod or other white fish; OR sea scallops
Coriander
2 tsp. sesame oil
2 baby bok choy, each cut lengthwise into quarters
2 tbsp water

Here is how you make Coriander Shrimp with Hoisin and Bok Choy:

Whisk orange juice, hoisin and ginger in small bowl. Pat fish dry on paper towels. Sprinkle coriander over top of fish, pressing in.Heat sesame oil in large nonstick skillet over high heat. Add fish, coriander side down, cook til just opaque in center. About 1.5 minutes per side. Transfer fish to a plate. Add bok choy and 2 tbsp water to skillet; sauté until wilted, about 2 minutes. Using tongs, divide bok choy between 2 plates, then top with fish. Add hoisin mixture to same skillet, boil until reduced to 1/3 cup, about 2 minutes. Drizzle sauce over fish and veg.
