2 cups boiling water
2 cups sliced mushrooms (about 5 ounces)
1 cup uncooked long grain brown rice
1 small onion, thinly sliced
1 tsp salt
3/4 tsp ground ginger
1 cup sliced water chestnuts
1 can (15 oz) mandarin orange segments, drained
1 package (6 oz) frozen snow peas, thawed and drained

Here is how you make Mandarin Shrimp:

Peel shrimp. (If shrimp are frozen, do not thaw; peel in cold water.) Make a shallow cut lengthwise down the back of each shrimp; clean out vein. Heat oven to 350 degrees. Mix water, mushrooms, rice, onion, shrimp, salt and ginger in ungreased rectangular baking dish, 13x9x2 inches. Cover tightly with aluminum foil. Bake about 40 minutes or until liquid is absorbed and shrimp are pink. Stir in remaining ingredients.
