Here is how you make Mediterranean Shrimp Flambe':

1. Heat the olive oil in a large skillet over high heat until just smoking. Add shrimp in a single layer over the bottom and allow to cook until just starting to turn pink, about 30 seconds. Remove from heat and transfer the shrimp to a bowl.2. Lower heat to medium high and add onion to the skillet, cook until softened. Stir in garlic, oregano and red pepper flakes. Cook until fragrant, about 30 seconds. Stir in tomatoes with their juice and cook until beginning to thicken. About 2 minutes.3. Stir in the shrimp and ouzo.
