Here is how you make "No Time to Cook" Citrusy Mexican-Style Shrimp:

Cut your onion and peppers into strips. Add EVOO to pan and cook onions until somewhat softened, then add peppers. Continue to saute for another 5 minutes or so. (They will continue to cook through the rest of the recipe, so don't worry if they don't look "done" at this point.) Add enchilada sauce and stir, making sure veggies are well coated. Add tomato paste, and stir until well-combined. Add your shrimp, and stir until they are all coated. Cover and cook over medium heat for 1 minute. Add orange juice, and again, stir to make sure it's well distributed.
