Heat oven to 375. Spray baking dish and fish with cooking spray and place well seasoned fish, skin side down, in baking dish. Bake 15-20 or until fish flakes easily with fork. Remove from oven.Meanwhile in sauce pan add 1 tsp olive oil and chopped tomato, cook for 10 min add mushrooms, cook additional 10 min add spinach and season to taste. Remove from heat.
