Serving size 1-2 as side dish1. Have all vegetables prepped.2. Heat large saute pan to medium.3. Add 1 tbsp of vegetable broth to pan4. Add onions and saute while stirring occasionally for 2 minutes.5. Add mushrooms and saute for 3 minutes. The mushrooms will begin to release their liquid. Turn heat down slightly and add Red Bell Peppers. Saute for 2 mintues before adding Spinach.6. Allow the spinach to begin wilting. Add 1-2 tbsp more of vegetable broth, stiring periodically.7.
