Here is how you make Spinach Mushroom Fritatta:

Preheat oven to 350 degrees.Spay a pan that can be put in the oven with a nonstick spray. Saute mushrooms in balsamic vinegar. Dice red pepper, red onion, green onion, and fresh basil and add to pan. When vegetables are almost done, add spinach to wilt spinach. Add red pepper seasoning and Italian seasoning.Whip egg whites and a tablespoon of water until soft peaks occur. When vegetables are fully sauted, fold egg whites into pan and gently mix. put small pieces of smoked salmon on the top of the mixture.
