Here is how you make Stuffed Orange Roughy:

Trim about 25% of the thin bits off the filets, so they are of even thickness.Finely chop the trimmings & place in a medium bowl with the onion, celery, and bread cubes. Stir in mayonnaise, salt, pepper (& worcestershire and/or Tabasco, if desired)Season the filets with salt & pepper & place in a small baking dish.
