200 gram(s) Raw king prawns, shelled and deveined
25 grams Dried Apricots thinly sliced
5 grams Fresh Ginger Root, finely diced
1 clove Garlic, finely diced
1tsp Sesame Oil
1tsp Sesame Seeds
75 gram(s) red pepper, thinly sliced
30 grams Onions, thinly sliced
10 mls Peanut Oil
30 mls chinese sweet Chilli Sauce
Small amount of water for cooling pan and stopping ingredients from burning.

Here is how you make Chinese sweet chilli and ginger King prawns.:

? Firstly dry toast the sesame seeds either in your dry wok or under a grill BUT keep an eye on them, they will very quickly turn from toasted and full of flavour, to burnt and tasting awful!? Ensure all the ingredients are fully prepared and you have them to hand, maybe in small containers, so that you can quickly throw them into the WOK as required.? Heat the wok on your stove on a high heat then add the 10mls, (2 teaspoons), of peanut oil and swirl it around to coat the inside of the wok.? When the wok is good and hot throw in the red pepper and the onions and stir fry quickly for around a minute until they are just taking colour and starting to soften.? Now add the apricots, ginger and garlic, stir frying quickly all the time for another minute. ? Throw in the raw king prawns and stir fry everything for another minute still on high heat.? Now add just a little water, (WARNING the water will turn to steam and expand very quickly, so don?t get too close!), to stop the ingredients such as the garlic, (which burns very easily), from burning.? Continue stir frying until the prawns have lost their opaque colour and turned nicely pink, (approx a further 2 minutes), then pour in the 30mls of sweet chilli sauce, turn down the heat a little and continue to stir the sauce through until warmed, (about one minute).? Turn off the heat and stir through the toasted sesame seeds and the teaspoon of sesame oil.?
