Bring water to boil for noodles.In a large skillet on medium -high, Add the tomatoes, garlic and shallots. Add to pan along with vinegar, sugar, seasonings and zucchini. Stir frequently until tomatoes start to break down, about 5 minutes.Add the noodles to the boiling water.
