Do a few pieces a time so they all get crispy, to many at once and they'll just stick together. Once the tortillas are crispy add the salt and pepper and the can of enchilada sauce. Mix well to cover all the tortillas and to heat the sauce. Turn off the heat and add the cheese on top of the chilaquiles.
