Rub tuna steaks with kosher salt and ground pepper. Preheat grill. In food processor process 1 large handful of fresh parsley and mint sprigs together. Place in bowl. Process peas until mushy and add to parsley mixture. Stir together. Grill tuna steaks, approximately 7-8 minutes each side. Add pea mixtures to shallots in hot pan. Sear pea mixture until crispy, turn and sear other side.
