3 cups frozen or fresh peas, thawed
1 cup chopped shallots
1/4 cup chopped garlic
1 handful fresh parsley
5-6 fresh mint sprigs
1 T. olive oil
Salt & pepper to taste


How Do I Make Spring Tuna?

Here is how you make Spring Tuna:

Saute shallots and garlic in olive oil until clear. Rub tuna steaks with kosher salt and ground pepper. Preheat grill. In food processor process 1 large handful of fresh parsley and mint sprigs together. Place in bowl. Process peas until mushy and add to parsley mixture. Stir together. Grill tuna steaks, approximately 7-8 minutes each side. Add pea mixtures to shallots in hot pan. Sear pea mixture until crispy, turn and sear other side.
