1 small yellow squash, chopped (about a cup)

1 small zucchini, chopped (also about a cup)

1 biggish carrot, peeled & chopped

2 longish scallions (or 3 stubbier ones), chopped

2T chopped fresh cilantro (more or less to taste)

.5c whole grain bread crumbs (I use the store brand, cheap & works beautifully)

1 large egg, beaten

1t black pepper

Light cooking spray (I use Smart Balance Omega)...can use a splash of oil instead, but the recipe's nutrition info is based off using the spray

Drain the tuna & set aside.Chop/dice the squash, zucchini, carrot, cilantro & scallion. Lightly spray skillet & cook diced veggies over medium heat until slightly softened (5-10 minutes depending on your range top). You want the veggies to still have a little bite to them, some texture, so don't overcook them to mush.Remove the veggies from the heat & allow them to cool slightly (just until they are not steaming off the heat).In a medium bowl, mix drained tuna, egg, bread crumbs, veggies, & pepper. Form into 4 medium patties (you can make them bigger or smaller for any hunger levels).
