I wanted to do something different with the lovely stuffed peppers we're getting these days and this is what turned up. The filling needs doctoring with spices of your choice - we used oregano and garlic powder, which i didn't put in the recipe. I think dill and lemon juice would be great!

Here is how you make Tuna and Lentil Stuffed Peppers:

Cook lentils according to package directions until al dente.Remove the tops from the peppers and clean them out. Par cook them in the microwave until they start to soften. This took about 5 minutes in our microwave, in one and two minute increments.When the lentils are done, drain them and add the tuna and corn and mix well. Add your spices here.Stand the peppers up in a baking dish and stuff the peppers. Pour the sauce over the top and bake in a 350 degree oven for about 30 minutes, or until the peppers are to your liking.Serving Size: Makes 2 good-sized servings.
