This is one of my favorite dishes to make because it has tons of protein and tons of veggies...and even my kids will eat it because I cut all the veggies up and put them in 1 cup bowls seperately so they can pick what they want in their packet.

What Are The Ingredients For Talapia and Veggie Packs Recipe?

The ingredients for Talapia and Veggie Packs are:

4 - 6-8oz fillets of white fish (I use Talapia)
2 tbsp extra virgin olive oil
1 cup sliced zucchini
1 cup sliced red bell pepper
1 cup sliced red onion
1 cup sliced mushrooms
1 cup brussel sprouts, washed, stems removed & halved
1 cup broccoli, cut up
4-5 cloves of garlic, minced
1 lemon, cut into wedges
2 tbsp fresh basil, shredded


How Do I Make Talapia and Veggie Packs?

Here is how you make Talapia and Veggie Packs:

I make "packets" by using two pieces of tin foil of the same size. Put one piece of tin foil down, add veggies desired, top with 1-2 tbsp of extra virgin olive oil and any spices you desire (I only put a couple cloves of garlic, fresh basil, a squeeze of lemon and a pinch of sea salt). Put second piece of tin foil on top of veggies and roll ends to "seal" packet. Each person picks whichever veggies they want.I also make the fish in a seperate "packet" that is nothing but the fish, extra virgin olive oil, garlic and lemon juice. I cook all packets at 375 degrees for 15-20 minutes until veggies are tender and fish is white.Enjoy!Number of Servings: 4Recipe submitted by SparkPeople user 0206MOMMY.
