Whisk in mustard, Italian seasoning, and maple syrup. Add carrots and bring to a boil. Reduce heat to medium and saute carrots until fork-tender or softer, about 4-5 minutes. Stir regularly and add more broth as needed to prevent sticking.Once carrots are cooked, check liquid, adding more broth as needed. You want a thin lining of broth in the bottom. Reduce heat to low and stir in cornstarch slurry. Continue to cook, stirring constantly, until liquid thickens into a glaze and coats carrots.
