Here is how you make Fox's Cauliflower, Leek, and Onion Crustless Quiche:

Preheat oven to 350 degrees.Peel red potatoes & slice into 1/4" rounds. Steam on stove until tender (about 10 minutes).Heat olive oil in pan and add leeks and onion. Cook for about 3 minutes, until tender. Add salami or bacon and cauliflower. Add 1/4 cup of water and cook for 10 minutes, stirring occasionally. After 10 minutes, drain out any water that has not cooked off.In a large bowl, beat the 8 eggs. Add salt, pepper, & thyme to taste, then stir in the 1/2 cup of shredded Gruyere. Stir in the cauliflower mixture.Spray a round pie plate with cooking spray and line the bottom of it with potato slices.
