Slice chicken breasts length ways then slice each half in three. Total of twelve pieces. Heat large pan. Add olive oil. After 30 seconds add chicken to pan and brown.add leeks to pan. Add mushrooms. Lower heat and cook, stirring occasionally for 5 minutes. Pour in stock,add quartered potatoes, bring to boil, then reduce heat, cover pan and simmer until potatoes are soft and chicken is cooked.
