In a shallow roasting pan toss shallots with 1 T of the oil and 1/2 of the salt and pepper. Cut the chicken breast in strips. In a food processor mix the remaining oil, mandarian oranges, wine vinegar, orange spread and rosemary, pulse until well mixed and pulpy. Pour over chicken in a large bowl and toss until well coated. Add to roasting pan, placing among the shallots and pour remaining marinade over all.
