1 package Healthy Choice Low Fat Smoked Sausage (14 oz.)*
1 tbsp. cayenne pepper
1 tsp. black pepper
1 tbsp. Smart Balance buttery spread
1 large onions
1/2 large bell pepper
1 clove of garlic
1 - 8 ounce can tomato sauce
1/2 can stewed whole tomatoes (Rotel)
1/4 bunch green onions
1 cup raw brown rice
water

* - Healthy Choice Low Fat Sausage is made with mostly turkey, but it does have some pork in it. You can substitute pure turkey sausage if you prefer.

Here is how you make Chicken and Turkey Sausage Jambalaya:

Cut chicken up into bite size pieces. Season with cayenne pepper and black pepper. Brown chicken in pot with melted butter. Remove chicken. Chop [white] onions and bell pepper. Cut garlic finely. Brown onions, bell pepper, and garlic. Add tomato sauce and stewed tomatoes. Simmer 15 minutes. Add chicken and sausage cut into bite size pieces. Cook until chicken is tender. Add raw rice and chopped green onions. Stir ingredients thoroughly. Add enough water to cover ingredients by about 1 inch. Bring to a boil. Cover and cook on low heat for 35-45 minutes or until rice is tender.NOTE: Unlike a lot of rice dishes, not all of the water will cook away.
