Place between plastic wrap and pound to 1/4 inch thickness. Season with salt & pepper. Toss pounded pork with flour in plastic bag. Heat olive oil in large skillet on med-high heat. Add pork and brown on both sides. Remove and set aside.Wisk the wine with the tomato paste. Add onions to pan and cook 2-3 mins. Add garlic and cook 1 minute. Stir the wine/tomato paste mixture to the pan and simmer 4-5 minutes - scraping the pan as simmers. Add the mushrooms and pork to the pan . Simmer for 7-10 minutes. Sprinkle with dried parstley and serve.Serve over spinach, pasta or rice.
