I saw a not as healthy version of Steak Frites, the French dish, on America's Test Kitchen. I decided to make a healthier version by skipping the butter, choosing top round steak over ribeye steak, grilling instead of frying, dressing the greens with red wine vinegar instead of regular salad dressing, using sweet potatoes instead of white potatoes for more fiber and nutrients, and baking with parchment paper and cinnamon instead of frying with peanut oil and cornstarch. Place a sheet of parchment paper in a baking pan. Slice the sweet potatoes into slices, place them in the pan on the sheet, and sprinkle the fries with cinnamon. Bake for 30 minutes at 400F. In the meantime, focus on the steak. On a cutting board, sprinkle the salt and pepper on both of the sides of the meat and pound the salt and pepper into both sides of the meat with a meat mallet.
