Here is how you make Mixed Veggie Veloute:

Makes about 8 servings, 1 cup + each. Wash, chop, and roast all vegetables at 375 F brushing with the olive oil before placing in oven. After about 45 minutes, remove from oven and move to a pot, with 4-6 cups water, with the salt and pepper, and adding the chopped herbs. Boil for about 30 minutes. When vegetables are soft, remove from heat. Drain if overly watery, otherwise move to next step. Blend with an immersion blender. Add in yogurt and season more, to taste.
