Here is how you make Aloo Gobhi:

Preheat oven to 475Roast Potatos and Cauliflower in oven until tender and lightly browned, about 35 minutes.In a skillet, saute onions, garlic, and ginger in oil until onions are translucent. Add the rest of the spices and lentils and mix together, continue cooking for 5 minutes. Add water to deglaze pan and then stir in the potatos and cauliflower, mixing thoroughly.
