Here is how you make Vegetarian Red Beans (Rajma):

Soak the beans overnight and boil them with some salt and 1" ginger (sliced). Set aside. Mash 1-2 tbsp of cooked beans separately.In a pot heat oil add grated ginger & garlic. Add chopped onions and saute till lightly brown. Add chopped tomatoes, chilli powder, garam masala powder, dhaniya powder, amchur powder. Once tomatoes are cooked add the tamarind paste and boiled red beans. Adjust salt to taste.
