1 tblsp olive oil

3 inch cinnamon stick
6 whole cloves
4 cardamom pods
1 tblsp whole cumin seeds
2 bay leaves
1 tsp turmeric
1.5 tsp cayenne pepper (or less, if you prefer curry milder)
1 tblsp ground cumin

Serves about 8 people (with rice or naan bread, and salad or veggies)Put yogurt in blender with half the garlic, and one chopped onion, and blend until onion is pulverised. Repeat with second onion.Brown chicken pieces in large saucepan in olive oil, remove when brown with slotted spoon and put in crockpot. When all chicken is done, melt butter in the same pan, then fry the cinnamon stick, cardamom pods, bay leaves, cumin seeds and cloves for about a minute. Add the other onions and garlic, and stir-fry until softened. Add the ginger and all other spices, and stir for another thirty seconds, then turn off the heat, add in the yogurt mixture from the blender and stir well.
