Here is how you make Curry Chicken (without dairy):

Cut chicken breasts into cubes and cook in 1tbsp of oil. Remove from pan and set aside. Saut? onions, peppers and celery for 5 min or until soften slightly. Combine Chicken with vegetables and add stewed tomatoes, curry and salt and pepper. Add more curry if you like it hotter. Let simmer on low for 15- 20 min while your rice is cooking.
