Sweat the onion in oil in a medium saucepan over medium heat for 5 minutes, or until soft and translucent.2. Add the garlic and ginger, and heat for 2 minutes3. Spoon 2/3 of the Onion mix into a Blender and blitz with 3 Table spoons of water, until a smooth paste is formed.4. Return the paste to the onion mix, and add all spices. Cook for 2 minutes.5. Add the yogurt 1 Tablespoon at a time, reserving 3 tablespoons for later. Add Chicken broth and Coconut milk and bring to a simmer. 6. Add the chicken to the curry mix, and simmer for 10-15 minutes or until the chicken is cooked through. (Do not boil, make sure the mix is kept at a simmer)7.
