Here is how you make Green Curry (chicken) with Rice:

Dice chicken breast and place into a nonstick frying pan with olive oil and cook on high heat for 10 minutes. Mix coconut milk, green curry paste and coriander leaves together and add to the frying pan. Simmer on Medium.low heat for another 10 minutes. Meanwhile put rice in a saucepan covering it in cold water making sure water is about 1/2inch above rice. cover saucepan and bring rice to the boil. Allow to boil for 5 minutes and turn off heat. The rice will then cook itself if you leace the lid on!Once the chicken has simmered serve on the rice. Serves 4 small plate full.
