Make sure that to not to overcrowd the pan so that pieces dont stick to each other. deep frying is better. Drain on kitchen paper and set aside.Heat oil in a wok, add cumin seeds and cook till they splutter, then add fresh ginger, garlic, curry leaves and green chillies.move them around a little bit, about 2 minutes, then add black pepper, salt, chilli powder. fry for a further minute.Add chilli garlic sauce. soysauce, vinegar, chopped herbs, garam masala and cook them for 1-2 minutes. Add some water and food color if using, if u want more gravy then u can add more water or chicken stock, but traditionally its a relatively dry dish.Add fried chicken in it, mix around to coat the pieces well, add yogurt, increase the heat to evaporate the excess liquid. in the end chicken pieces should look shiny. Adjust the seasoning if necessary.
