Here is how you make Indian Coconut Lentils:

Heat EVOO in large sauce pan over ed-hi heat. Add chopped onion, cook until soft. Add ginger, red pepper, garlic cook 5 min. more or until onion is golden. Add Coconut milk cook briefly, add curry paste, cook about 5 min. Stir in lentils and bay leaf. Bring to a boil. Reduce heat to low. Simmer stirring occasionally until lentils are soft - 20-40 minutes - water to keep lentils simmering in creamy sauce. Discard bay leaf.
