Dice one of the onions and fry in a large pan with the olive oil and garlic. When onions are translucent, add tomato pieces and fry, stirring frequently, until they break down. Add potatoes, seitan, yoghurt, and spice mix. Stir and let simmer for 5 minutes. Add 2 cups of water, and let simmer on medium heat until potatoes are tender, about 20 minutes. Stir periodically to prevent it burning.2. While the curry mix simmers, prepare 6 cups of basmati rice (about 2 1/2 cups, dry). Combine milk and saffron threads and heat in microwave on high for 45-60 seconds. Let stand to infuse. Slice the second onion into strips and fry in a non-stick pan until onions begin to brown.3. Preheat oven to 350F. When the curry and rice are done, lay half of the rice down in a casserole dish, cover with curry, and top with remaining rice. Sprinkle the fried onions and almonds on top, and pour the saffron milk over everything.
