Meanwhile, heat a large, non-stick skillet and add mustard seeds. When they begin to pop, add onion, ginger, jalapeno and garlic. Add a splash of water and cook until the onions and garlic are golden. Add coriander and cumin, cook 1 minute. Add tomatoes and cook, stirring, until tomato is saucy.Add V8 and bring to a boil.Reduce heat and cook 6 minutes. Stir in cooked lentils and remove from heat.
