Here is how you make Gently Stewed Beets:

Peel beets and cut into 1 inch chunks. Put oil in wide, medium sized pan and set over high heat. When oil is hot put in cumin seeds and bay leaf. When leaf darkens slightly (only takes seconds) put in tomatoes, ground cumin, coriander, tumeric, cayenne, beets, salt and water. Stir and bring to boil.
