Makes 6 6" round loavesSift together flours and salt, add water and stir to make a soft dough. Turn out onto lightly floured surface and knead 3-4 minutes until smooth. Place in lightly oiled bowl and cover with plastic wrap. Let sit for an hour.Divide dough into six balls and flatten with your palm into a disc. cover with plastic wrap and let sit for 10-15 min. Heat oven to 450 F and place cookie sheet in heating oven. Place 2-3 loaves on the cookie sheet and bake 8-9 minutes until slightly browned on top.
