Another one I whipped together turned out really well and made the picky fiance very happy. I sort of "eyeball it" when I'm cooking so you don't have to stick to to my instructions very strictly, you can simmer longer if you'd like for extra flavor, add spices or veggies... easily modified. Prep time varies depending on how fast you chop. If you use a processor it's oractically no time.

1 lb. Ground Turkey Breast Extra Lean
1 can Stewed Tomatoes -no salt added
1 can Tomato Sauce
1 can Tomato Paste
1 large Onion, chopped
1 large stalk of Celery, chopped
2 large carrots, peeled and chopped
1 cup sliced fresh mushrooms
1 bunch spinach, stems removed
2 tbsp Italian Herb Seasoning
1 tbsp Garlic powder
1 tsp Coarse salt
1 tsp Coarse black pepper
2 cloves Garlic, chopped
2 cups Ricotta cheese -fat free
2 cups shredded Mozzarella -fat free
1 16 oz tube of prepared organic polenta
1 tsp Crushed Chili Pepper Flakes


How Do I Make Baked Polenta Lasagna?

Here is how you make Baked Polenta Lasagna:

Cook spinach until completely wilted. Drain, squeezing out excess water and set aside.Heat oil in a large skillet over medium-high heat. Cook Onion, Garlic, Mushrooms, Carrots, and Celery until just softened and onions are clear (about 4 minutes). Add ground turkey and brown until cooked. Stir in the stewed tomatoes (with juices), tomato sauce, tomato paste, italian seasoning, garlic powder, chilli flakes and salt & pepper to taste. Mix well and bring to a light boil. Add spinach to sauce, lower heat, cover and let simmer for 15 minutes stirring occasionally and adding seasoning to taste.In the meantime:Heat oven to 375*Cut the polenta into thin slices (no thicker than 1/4")When sauce is ready: In a baking dish layer 1/3 meat sauce, 1/2 the polenta, another layer of meatsauce, half the ricotta and mozzarella, second layer of polenta, rest of meatsauce, the rest of ricotta and mozzarella. Cover with foil and back for 30 minutes or until it is bubbling and the cheese is melted. Uncover and bake for an additional 5 mimutes.
