This is the latest rendition of a recipe that I have been working on that is based on the manicotti from one of our favorite restaurants. The sauce is my Mother's recipe that we also use for lasagna and spaghetti.

What Are The Ingredients For Doc's Baked Manicotti Recipe?

The ingredients for Doc's Baked Manicotti are:

Manicotti 1 box(14 manicotti)

Sauce:
Two 6 ounce cans of tomato paste
Two 14.5 ounce cans of diced tomatos(no salt added)
Two cups water
1 to 2 teaspoons of salt(to taste)
1/2 tsp of ground pepper
1 tsp. of garlic powder
1 tsp. of ground oregano
1/4 cup of sugar
3/4 cup chopped onions(yellow or sweet)
1 pound 97% fat free ground beef

Filling:
2 pound container of ricotta
2 eggs
1 pound of ground mild Italian sausage
One 10 ounce package of frozen spinach
2 tsp of Italian Seasoning

1/2 cup fat free mozzarella to top the pasta


How Do I Make Doc's Baked Manicotti?

Here is how you make Doc's Baked Manicotti:

Makes 7 servings of two manicotti eachPreheat oven to 350 degreesPut the spinach in a microwave save bowl, and then microwave for 10 minutes on the defrost setting. Remove the spinach from the box, place in a dish towel and squeeze out the excess water.Set aside.In separate skillets, brown off the ground beef and the sausage, breaking up both meats as you go so that they are in smaller pieces. Drain and set both aside.Sauce:In a large sauce pan, combine the tomato paste, diced tomatoes, water, salt, pepper, garlic, oregano, sugar and onions. Cook on medium to medium high heat until the onions start to melt. Now add in the ground beef and cook a little longer until the meat is heated through again. Remove the sauce from the heat and set aside.Filling:Beat the eggs in a large mixing bowl, then add in the ricotta. Mix until these are well blended. Add in the sausage and the drained spinach. Finally mix in the Italian seasoning.Cover the bottom of a large baking dish with some of the sauce. Stuff the individual manicotti with the filling and arrange them on top of the sauce in the bottom of the dish. Now cover the manicotti with more sauce. You may have sauce left over after you do this. You can freeze it for future use for up to 1 month.Sprinkle the mozzarella over the sauce-covered manicotti and cover the dish with aluminum foil.
