1 can beans, drained and rinsed (Eden Organic brand beans have a BPA-free can lining and are seasoned with seaweed instead of salt so they have WAY less sodium)
1/2 of a package of Hormel Natural Choice uncured pepperoni, cut into quarters or small strips (or whatever salami or pepperoni you prefer)
1/2 Tbsp minced garlic (or a clove, or two, whatever you like)
shake of oregano
salt to taste
any other spices you like
1/4 tsp crushed red pepper flakes, to taste
1 Tbsp olive oil

2 c dry pasta - I use whole wheat, my family prefers regular

Cook pasta according to package directions.While pasta is cooking, saute pepperoni in a medium sized frying pan until it begins to lose its oil and brown slightly. Add tomatoes, beans, garlic, oil and spices and simmer. When pasta is done, drain, reserving a little of the pasta water for the sauce. Add pasta water to the sauce and simmer until water is cooked off (starch in pasta water will help sauce thicken a little). Serve!
