3 links of hot italian sausage, about 3/4 lb.
4 Cloves of Garlic, chopped fine
2 medium onions, chopped
8 medium stalks of celery, diced
4 carrots, diced
1 Bay Leaf
1 tsp. of crushed red pepper
1 tsp. dried basil
1/2 tsp. cinnamon
1/2 tsp. smoked paprika
1 fresh Jalapeno, chopped fine
2 canned Jalapenos, chopped fine
1 Pasilla Pepper or Green pepper, diced
1 14.5 oz. can of stewed tomatoes + one can full of water
3 Tbs. Chianti, or red wine vinegar
1 32 oz. tetra pack of Chicken Stock + one container full of water
1 14.5 oz. can of canellini or pinto beans, rinsed and drained
1/2 cup whole wheat orzo, or other tiny pasta
1 cup cold water

Here is how you make Sausage and Vegetable Bean Minestra:

makes 8 servings of approximately 2.5 cups each1. prick sausages many times, and place in a medium saute pan, that is warmed to medium. Turn sausages until all sides are browned and cooked through, approximately 12 minutes. Remove and place links on a paper towel2. Place oil in a medium stock pot, over medium low heat, add garlic, and stir continuously until garlic is golden, remove pot from heat, add in onions cellery and carrots, and replace onto heat at medium, then add Bay leaf, red pepper, basil, cinnamon, and smoked paprika, stirring every few minutes for 10 minutes.3. Add the 3 types of peppers, and continue stirring every 3-5 minutes, for approximately 10 minutes more, or until the vegetables are softer and onions are turning golden.4. Add stewed tomatoes, stirring to combine, let simmer 5 minutes and then add one can full of the water, stir and let the mixture come to a boil, add wine or vinegar, then add stock and container of water, once again stir to combine and let mixture come to a boil, stirring every 5 minutes until pot boils. Meanwhile, slice the sausage into thin 1/4" or less slices, set aside.5. Add orzo, and beans, cook at a simmer according to package directions, when only 3 minutes remain in the pasta cooking time add sausage slices.
