2 Tsp minced fresh thyme
2 Tbsp cornmeal
1/2 cup grated parmesan cheese
1 Tbsp black pepper

Here is how you make parmesan and thyme focaccia bread:

In a standered electric mixer with paddel attachment beat together yeast, sugar, and water. let stand for 5 minutes or until foamy. In a seprate bowl stir together 5 cups flour and salt. stir oil into yeast mixture. With motor on low speed add flour to yeast mixture. With dough hook kneed dough 2 minutes. or until dough is soft and slightly sticky. Transfer dough to a floured surface and add remaining flour. Kneed dough untill soft and no longer sticky. Form dough into a ball and place int an oiled bowl and coat the dough ball. Cover the bowl with a towel and let rise in awarm place untill the dough doubles in size (45 min.). Transfer dough to a floured surface and kneed in thyme. Divide dough in half. Cover dough halves with bowl and let dough rest for 5 min. pre heat oven at 450 F. oil 2 13x9 baking pans and sprinkle with cornmeal. Roll out dough halves to form a 13x9 rectangles and place into pans. Cover each pan with towel and let dough rise for 20 min. Sprinkle the top of the two loaves with parmesan and pepper. With lightly oiled fingertips make indentations about 1/2 deep and 1 inch apart all over the dough. Bake in the middle of the oven for 12 minutes or until golden brown.
