1 lb spaghetti
2 large eggs
3 tbs olive oil
8 oz bacon
2 cups parmesan cheese
1 cup frozen peas
4 cloves of garlic - minced


How Do I Make Carbonara?

Here is how you make Carbonara:

This comes together pretty quickly so be prepared!Boil pasta according to package directions in salted water. While pasta boils prepare sauce. Start by heating 3 tbs oil over medium heat in a large skillet. Chop bacon and add to skillet. Sautee until brown and crispy. Here you can drain some of the fat if you like but leave enough to coat the pasta. Add garlic and sautee for less than one minute, being careful not to brown or burn it. Add pasta and toss to coat with olive oil and bacon fat. Wisk eggs into parmesan cheese. Do this briskly to avoid lumps. Remove pasta from heat and add egg and cheese mixture. Removing pasta from the heat should ensure that the eggs don't scramble. Wisk in the egg and cheese mixture into the pasta tossing to coat. You can add a little of the pasta water to thin the sauce as desired. Add one cup of frozen peas.
