3 Links Sweet Lean Italian Turkey Sausages Cut into slices
3 Cups Sliced (1/4" thick) Yellow Summer Squash
3 Cups Sliced (1/4" thick) Green Zucchini Squash
8 oz Portobella Mushrooms Sliced thin
3 cups Spaghetti Sauce (I use my home made recipe http://recipes.sparkpeople.com/recipe-detail.asp?recipe=1076446)
3 Cups Part Skim Ricotta Cheese (24 oz container)
2 Large Eggs
1 8 oz package of Low Fat Mozzarella Cheese
2 Teaspoons Italian Seasoning

Here is how you make Geraine's Cheesy Layered Casserole:

Preheat oven to 350In a skillet, brown ground beef until well crumbled. While the beef is frying, cut the vegetables into slices, also cut the sausages into slices, I find it helps if they are slightly frozen. In a bowl, mix the Ricotta Cheese, Eggs, and Italian seasoning together until smooth.When the beef is done, drain all the fat and place on the bottom of a 9 x 13 casserole dish, spread 1 1/2 cups of the spaghetti sauce over the beef, spread 1/2 of the Ricotta mixture over the sauce. Now take the Yellow squash and arrange a layer in the dish, take half of the sliced mushrooms and sprinkle evenly over the squash. Sprinkle 1/2 of the Mozzarella Cheese over this layer. Now take the Zucchini and arrange a layer in the dish, sprinkle the remaining mushrooms evenly over the zucchini, place the sliced sausages evenly over the mushrooms (more than likely they will not be touching, just arrange over the entire dish). Spread the remaining half of the Ricotta mixture evenly over the sausages. Spread the remaining spaghetti sauce over this layer and sprinkle the remaining Mozzarella cheese on top.
