1 1/2 cups frozen artichoke hearts (thawed)
1 cup baby bella mushrooms
1 tsp dried thyme
Three cloves garlic minced
1/2 cup reduced fat sour cream
1/2 cup lite mayonaise
1 teaspoon garlic powder
1/2 teaspoon white pepper (or black)
3/4 cup grated Parmesan cheese
1/4 cup l/f mozzarella
4 oz marscapone cheese
Herb ox sodium free chicken bouillon packet
Pinch of fresh nutmeg
4 oz uncooked whole wheat penne

Here is how you make Gina's Clean the frig veggie pasta casserole:

Preheat oven to 350. Spray 8 x 8 pan with cooking spray. Cook pasta in water with olive oil and garlic powder. Drain, reserving 1/2 cup pasta water. Heat oil in pan and saute mushrooms & thyme, then add spinach, artichoke hearts & garlic over medium high heat until browned. Reserve 1/2 cup veggie mixture. Remove remaining veggies and mix with pasta. Mix sour cream, mayo, garlic powder, pepper, Parmesan and mozzarella cheeses. Mix the marscapone cheese, pasta water, milk, herb ox packet and dash of fresh nutmeg in pan used for mushrooms over low heat until creamy. Take 1/2 cup of reserved veggie mixture and spread out across the bottom of 8 x 8 pan. Spread pasta/veggie mixture next. Pour the marscapone cheese sauce over pasta mixture. Then add the sour cream/mayo/cheese mixture on top of pasta/veggie. Bake, uncovered, for 30 minutes or until top is nicely browned.
