Chop up into 1" chunks: 2 zucchini 3 yellow squash 1 orange bell pepper 1 red bell pepper 2 med. onions 1 box mushrooms (just halve them) Mix all this with 1 T. olive oil and 1 T. Italian seasoning, salt and pepper. Put on a cookie sheet in a 450 F oven for 20 minutes or until they are roasted. Meanwhile, in a skillet make a sauce: 3 cloves garlic, minced 1 onion, diced 1 T. olive oil Saute and add: 28 oz. can tomatoes 1 small packet Sweet and Low Italian seasoning to taste Simmer until onion is soft and it looks done...about 15 min. Now: In very large bowl...dump: 2 cups cooked brown rice 2 cups ff cottage cheese roasted vegetables sauce 2 cups shredded ff cheddar 1 T. hot pepper sauce like Tobasco or Bull Check seasonings. I add a little more salt and pepper. Mix and place in large casserole. I top with more ff shredded cheese and ff parmesan (Use reduced fat if you can't find the ff.) Bake at 450F for 35 minutes.
