1 bunch broccolini (asparation), cut into edible pieces, or 1 c. broccoli, in pieces
1 med. zucchini
1 med. onion
3 cloves garlic, sliced
1 1/2 c.prepared light spaghetti sauce, such as Classico Tomato and Basil
1/2 c. Parmesan cheese
1/4 ts. crushed red pepper
salt and pepper to taste

Here is how you make Spaghetti Squash Italian Style Veggie Casserole:

In advance, slice squash in two, seed, bake upside down in baking pan with 1/2 in water for about 45 minutes. Pierced with fork, it should be very tender Do NOT undercook! Pull out squash with fork while warm.Saute onion, pepper in ts. olive oil for about a minute, add broccolini/broccoli, go one more minute, then add zucchini, garlic, mushrooms. Cook until broccolini/broccoli is just fork tender. Add spaghetti sauce and crushed pepper.Spread spaghetti squash in bottom of 13x9 in, pan (smaller one will work.) Don't be fussy, and it will not be thick over the whole bottom. Now place vegetable mixture on top, sprinkle 1/2 c. Parmesan cheese on top. Bake 350 degrees for 25 to 30 minutes.For this to feel like a 'pasta' meal, you need to divide it into 4. This gives about a 1 1/4 portion. (I measured!)
